Tonari brings wafu Italian cooking to DC straight from Japan

Barbara F. Watson May 31, 2022

Wafu cuisine is effectively recognized in Japan, but not so effectively regarded outside the house of the nation. Tonari wants to adjust that.

WASHINGTON — Tonari, the most current cafe from the Daikaya Team, is on a mission. But its mission didn’t start where you may well be expecting.

The people powering Daikaya have a number of ramen stores unfold out throughout the District, including its namesake ramen store (with Izakaya upstairs) Bantam King fried hen and ramen, Hatoba and Haikan.

Tonari is correct next door to Daikaya, and around the corner from Bantam King. But for the group’s up coming act, they didn’t want to open an additional ramen shop.

To listen to Daikaya co-proprietor Daisuke Utagawa reveal it, when they walked into the area that would grow to be Tonari, they realized what they had to do.

The strategy for Tonari is wafu Italian cuisine.

“The term wafu signifies Japanese-fashion,” Daisuke spelled out. “Normally it usually means some thing that is not at first Japanese that is done in Japanese style.”

Daisuke states Tonari’s wafu Italian is not a new design and style of cuisine, but it is something that is new to D.C., and new to the United States.

“Wafu Italian is not anything we invented,” Daisuke explained. “It’s something that exists in Japan, but it’s not well-identified outside the house of Japan.”

Daisuke stresses that wafu Italian is a coming-together of cultures, somewhat than what some could simply call “fusion.”

“I individually do not like the phrase fusion,” he explained. “Not mainly because of what it suggests, but mainly because of what the connotations are. There is a difference in between a pure cultural phenomenon of two things conference and starting to be some thing, virtually organically, versus some thing that is set jointly by pressure.”

That is the mission behind Tonari: To educate persons about the strategy of wafu Italian cuisine. To demonstrate the heritage of two cuisines that came together by natural means in excess of the study course of decades in Japan.

Wafu pasta dates back to the ‘50s with a cafe whose identify translates to “hole in the wall.” Daisuke said the reason that the use of Japanese elements in Italian cooking took off in Japan is that the two cultures share a similar technique to delicacies.

So why provide that design of cooking to D.C. diners?

“Here’s a straightforward response for you,” Daisuke suggests, gesturing to a substantial black pizza more than at the heart of the kitchen area. “That oven.”

It was very clear to the Tonari crew that they preferred to use that huge oven in some respect. Which is where the strategy of wafu pizza and pasta was born. But although wafu pasta had roots and background behind it, wafu pizza was anything totally new, and anything that Daisuke and his partner dove into headfirst.

Obtaining by now founded a ramen provider in Sapporo, Japan via their other ventures, that provider informed them they also make pasta, and that they tasted unique from any other pasta they could get for the reason that of how they’re designed.

“They have this ramen technological innovation and they utilized it to pasta, and it is a completely diverse issue,” Daisuke claimed.

Pizza was extra get the job done. Because there was no proven wafu pizza, they experienced to begin from the ground up.

“If we want to make wafu pizza, we have to outline it,” Daisuke reported.

That despatched Daisuke and his Daikaya spouse Chef Katsuya Fukushima to Japan to acquire a dough applying inspiration from Japanese milk bread – what Daisuke phone calls Japanified Wonderbread.

“We went by iteration and iteration and iteration and what we arrived up with was like, ‘Oh my god, this is definitely amazing,” Daisuke claimed.

He mentioned the complete method took about 3 months, by way of heaps of back again-and-forth and demo-and-error. They labored on every thing from the parts of the dough to the cooking vessel, to the temperature and timing right before they settled on the dough.

What finishes up on your plate at Tonari is a little something that appears like your typical deep dish pizza, but preferences completely diverse. It is crispy and crunchy, whilst being chewy and pillowy at the exact time. It is immensely craveable.

What pushed Daisuke and his lover to develop this new pizza? The short respond to is the oven, but it goes further than that.

“There’s quite a few ways to seem at a cafe. 1 is, you’re hungry, you might be feeding folks. But you can do that anyplace,” Daisuke explained. “But when you’re going to a cafe, you obtained to have an extra motive to go there. At the conclusion of the day it’s a community, suitable? When you’re making a local community you have to have ethos. The ethos to us is fairly important. We’re in this each day. If we just do it due to the fact ‘Yeah, it’s a business enterprise,’ you form of shed enthusiasm.”

That enthusiasm was tested when Tonari initial opened its doors in 2020. Months later the COVID-19 pandemic hit and the cafe had to pivot, briefly providing just take-away choices, shutting down and sooner or later providing a tasting menu after doors opened yet again.

Now, Tonari is back again to entire toughness, they have nixed the tasting menu and supply things a la carte. They had been also just added to the 2022 version of the D.C. Michelin Tutorial. From exactly where Daisuke is standing, the accolades are not what this cafe is about. The aim is not to get a Michelin star.

“Our objective is not to be a Michelin-star cafe,” he claimed. “Our goal is to get the term out on what individuals are having in Japan now.”

That generate to get the word out is a little something shared by Nico Cezar, Chef de Cuisine at Tonari. Chef Nico is an alum of Michelin star Italian cafe Masseria so he’s putting his background to excellent use.

“It’s a blessing for me to be equipped to parallel my training under cooking Japanese foods and cooking Italian foods, which tends to make [wafu cooking] a little much easier to technique because I know that I can use this ingredient, or that strategy,”Cezar reported. “It’s less difficult for me to approach it that way than sticking to traditional Italian or traditional Japanese. What we want to do is make positive that we are obeying this culture of food in Japan and introducing it to the world… Building them mindful that there is this kind of a point as Japanese-design Italian foods. We’re not attempting to mash up matters for the sake of fusing two cultures alongside one another, you want to make guaranteed that it is shelling out homage to that culture-particular food items model.”

Even though cooking the spaghetti napolitan, a dish that’s been on the menu given that Tonari opened, the chef describes the importance of the noodles and the fresh components utilized to convey the straightforward dish alongside one another.

“I assume it surprises folks every time they taste the dish, they’re like, ‘Oh it is a ketchup spaghetti, how great could it be?’ It’s just how it is place jointly,” Cezar said. “Purchasing products that is at the peak of its year. The ideal of what you can responsibly get. Something which is sustainable. Which is a thing that I want to force forward to the menus that we have in this article, just producing positive that we’re sticking to the exact concept of symbolizing Italian cooking and Japanese cooking… producing confident that we’re paying out respects in a respectable way without the need of striving to reinvent the wheel. At the stop of the day I want Japanese men and women to appear in in this article and be like ‘Oh, this continue to would make perception. This cafe is accomplishing each preparation or method justice and symbolizing it properly.’”

The menu, which Cezar would like to transform each individual month, capabilities some pizza and pasta mixtures that may possibly be overwhelming to some diners, but Cezar hopes that these who appear to Tonari will be adventurous, and ready to test a little something new. For occasion, the Mentaiko cream is a sauce produced with cod roe. Correct now, it’s featured on both equally a pasta and a pizza on the menu.

As he hundreds a Mentaiko and corn pizza into the all-crucial pizza oven, he explains that the pie gets loaded with cheese, and that the cheese aids the pizza get ridiculously crispy in the pan.

“It’s almost like a corner of a lasagna, but every person receives a corner piece,” he explained.

Cezar claims creating new menu items and recipes can be hard, but it is some thing he enjoys.

“The attractiveness about finding out Japanese-style cooking is you value subtraction as you go,” the chef reported. “You only use what you want, and that is quite challenging for a chef to do.”

He said it goes back to the mission of acquiring the term out about wafu cuisine.

“How do you educate individuals is the challenging portion,” Cezar said. “If you blindfold someone they’ll feel, ‘this is a pepperoni pizza.’ Yeah, but do you style the intricacies of the substances that go into the sauce? That’s the challenge. I think we’ve carried out a fantastic position. My hope is that, relocating forward, we’ll have a great deal extra people today curious to arrive and say, ‘I want to see what you guys are undertaking.'”
